If ever there was a hand crafted spirit, JUNIPER GREEN would be at the top of the list. Produced at the Thames Distillery in the heart of London, JUNIPER GREEN is carefully made in two (2) very small stills each having a maximum production of 500 liters per day. In fact, they have named the 2 stills Tom Thumb and Thumbelina symbolizing the small but unique aspect of our distillation process. Click for a larger view

JUNIPER GREEN London Dry Gin uses only the world's finest organic grain, water and a combination of 100% Organic Botanicals. Organic grain has an excellent content balance for the production of high quality alcohol. Organic grain has a significantly lower yield of 320 liters per ton compared with the commercially grown grain that produces approximately 430 liters per ton. 

Commercially grown grain is normally high in starch reflecting both the type of grain grown and the stimulus of artificial fertilizers. Alcohol from Organic grain by contrast is naturally soft and smooth and requires no further processing.
