Papagayo Organic Rum is produced in a remote area of Paraguay, a landlocked country in the heart of South America bordered by Argentina and Bolivia. In 1993 in a traditional and underdeveloped region called Arroyos y Esteros, 60 miles north of Asuncion the capital of Paraguay, Eduardo Felippo began an organic farming project. The objective was to help the lowly paid sugarcane farmers, of whom there were about 1,000 in the area, who were each producing small quantities of the cane and suffering a low standard of living. Today, more than 800 of these families are committed to producing Organic sugarcane and the benefits are twofold. The farmers receive a significantly better price for their cane and the environment is altered due to the organic method of farming. In addition, the farmers are given education in production, harvesting and transportation as well as funds sent by the International Trade Fair Association. The sugarcane
produced by these farmers is the raw material from which PAPAGAYO
ORGANIC RUM is made. It is distilled in the traditional stills but now
under the control of the Swiss Organic Certification Company, IMO
Institut fur Marktokologie. The Process: The Organic Sugarcane is crushed and the syrup extracted for fermentation. The fermentation lasts 36 hours until the syrup has reached the ideal levels of purity. The pure fermented syrup is then distilled in traditional stills into rum, which in turn is filtered and placed into special ageing barrels where its distinctive Organic flavour reaches perfection. When ready for drinking the Organic Rum begins its long journey, first by carts to the river port and then onwards to the markets of the world. PAPAGAYO ORGANIC RUM and SPICED RUM are the world's first Organic Rums. They are SINGLE ESTATE rums and not a blend produced from many countries or areas as are many of the better known rums. They are rums to be savored and enjoyed with cola or your favorite fruit juice. During the year we will be participating in a few events such as the various Fancy Food Shows.
